You will need:
- 3 large cloves of garlic
- 1 tablespoon of extra virgin olive oil
- 18 ounces of canned chickpeas (2 1/3 cups)
- 1/4 cup of fresh lemon juice
- 3 tablespoons of water
- 3 tablespoons of tahini (sesame)
- A pinch of cayenne pepper
- 1/2 of a up of chives (minced)
- Salt to taste
- Preheat the oven to 200 degrees celsius
- Peel the garlic and place it in a foil pouch and drizzle about a teaspoon of olive oil over it
- Roast it in the oven for about 20 minutes or until the garlic is soft
- In a food processor, mix together all the ingredients until it is very fine and smooth
