Roasted Garlic Hummus

Woe is me... yes, it is a Martha Stewart recipe... what has become of me...

You will need:
  • 3 large cloves of garlic
  • 1 tablespoon of extra virgin olive oil
  • 18 ounces of canned chickpeas (2 1/3 cups)
  • 1/4 cup of fresh lemon juice
  • 3 tablespoons of water
  • 3 tablespoons of tahini (sesame)
  • A pinch of cayenne pepper
  • 1/2 of a up of chives (minced)
  • Salt to taste
  1. Preheat the oven to 200 degrees celsius
  2. Peel the garlic and place it in a foil pouch and drizzle about a teaspoon of olive oil over it
  3. Roast it in the oven for about 20 minutes or until the garlic is soft
  4. In a food processor, mix together all the ingredients until it is very fine and smooth
Annnd some bossa nova :)
