Banana Bread

A good snack, dessert, even yummy for breakfast.


  • 1/2 a cup of room temperature butter
  • 2/3 of a cup of brown sugar
  • 2 eggs
  • 4 or 5 overly ripe bananas
  • 2 teaspoons of vanilla essence
  • 1 & 1/2 cups of flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 1/2 a teaspoon of freshly ground nutmeg
  1.  Preheat your oven to 170 degrees Celsius
  2. Mix together the flour, baking soda, salt, baking powder and nutmeg
  3. In a separate bowl, mix butter, sugar and vanilla essence
  4. Get your hands dirty and squeeze the bananas. Add them to the bowl of butter and sugar and mix
  5. Slowly add the dry ingredients to the wet ingredients, stirring well
  6. Pour into a greased tray
  7. Bake for 50 minutes to an hour

  1. You know what is the only consistent thing in this world? It is not change, I tell you! It is every household has one way or the other need a good bread recipe for overriped bananas. Yup, all households do. And this is the answer to the problem of overriped bananas. Thanks for sharing! I'll start baking...

  2. Apple sauce (and part oil if desired) makes an excellent substitute for butter!
