Verde Caprese Salad

  • 2 large ripe tomatoes
  • An amount of mozzarella equivalent to the mass of tomatoes
  • 1 ripe avocado
  • Spring onion
  • 2 stems of fresh basil
  • Salt & Pepper
  • Olive oil
  • Balsamic mouse

  1. Wash the tomatoes and slice them
  2. Slice the mozzarella so it is a similar width to the tomatoes
  3. Lay them in a row one on top of the other
  4. Finely chop the spring onions and basil leaves and place on your rows
  5. Grind salt and pepper on top
  6. Drizle with olive oil and balsamic mouse
  7. Line the sides with avocado, peeled and diced
