Calabrese and Fresh Basil

  • One red and one yellow capsicum
  • Two onions
  • 3 cloves of garlic
  • 1 large can of good quality tomatoes
  • A handfull of fresh basil
  • One tablespoon of olive oil
  • 1/2 a cup of cream
  • 1/2 a cup of sundried tomatoes
  • Some sugar, salt and pepper to taste  

  1. Finely chop the onion and garlic and saute them in the olive oil
  2. Chop the capsicum and add it to the pan
  3. Pour in the tomatoes and lower the heat, cover the pan and let the mixture simmer
  4. Season it with salt, pepper and sugar and continue tasting it as it cooks
  5. Once finished, blend the sauce with cream and sundried tomatoes and mix in the finely chopped basil
