Sesame Stir Fry with Orange Zest and Toasted Walnuts

A very delicious and odd combination of ingredients. 



You will need:
  • 2 branches of celery
  • One of each capsicum (bell pepper) - red, yellow and green
  • 2 carrots
  • 3/4 of a medium sized zucchini
  • 2 medium sized onions
  • 2 cloves of garlic
  • 1/4 of a cup of walnuts
  • 1 tablespoon of sesame oil
  • 1 & 1/2 tablespoons of low sodium soy sauce
  • 1/3 of a cup of water
  • 1 teaspoon of freshly grated ginger 
  • 1 orange (1-2 tablespoons of freshly squeezed orange juice and zest for garnish)
  • Salt & pepper to taste


Steps:

  1. Chop the onions, crush the garlic and place them in a wok or pan with water, sesame oil and soy sauce on medium-high heat
  2. As they cook, wash and dice all remaining vegetables
  3. Add the peppers and zucchini
  4. Leaving the vegetables to simmer, in another frying pan on a low heat, slowly toast the walnuts until they are lightly browned 
  5. Place the carrots in the wok with the vegetables and after about 4 minutes, add celery and orange juice
  6. Leave to cook until the vegetables are soft but the celery is still slightly crunchy
  7. Serve the vegetables with the toasted almonds and rice and garnish with orange zest
