A very delicious and odd combination of ingredients.
You will need:
- 2 branches of celery
- One of each capsicum (bell pepper) - red, yellow and green
- 2 carrots
- 3/4 of a medium sized zucchini
- 2 medium sized onions
- 2 cloves of garlic
- 1/4 of a cup of walnuts
- 1 tablespoon of sesame oil
- 1 & 1/2 tablespoons of low sodium soy sauce
- 1/3 of a cup of water
- 1 teaspoon of freshly grated ginger
- 1 orange (1-2 tablespoons of freshly squeezed orange juice and zest for garnish)
- Salt & pepper to taste
Steps:
- Chop the onions, crush the garlic and place them in a wok or pan with water, sesame oil and soy sauce on medium-high heat
- As they cook, wash and dice all remaining vegetables
- Add the peppers and zucchini
- Leaving the vegetables to simmer, in another frying pan on a low heat, slowly toast the walnuts until they are lightly browned
- Place the carrots in the wok with the vegetables and after about 4 minutes, add celery and orange juice
- Leave to cook until the vegetables are soft but the celery is still slightly crunchy
- Serve the vegetables with the toasted almonds and rice and garnish with orange zest
