Quinoa Salad

Delicious, fresh and filling quinoa salad.


Ingredients:
  • 1 cup of quinoa
  • 1 1/2 cups of water
  • 1 carrot
  • Half a small cucumber
  • 1 teaspoon of apple cidre vinegar
  • 1 1/2 teaspoons of olive oil
  • 1 tablespoon of finely diced parsley
  • Half a medium-sized tomato
  • Salt and pepper to taste
  1. Cook the quinoa in a cup and a half of water
  2. Leave to cool in the fridge
  3. Peel and grate the carrot and cucumber
  4. Finely dice the tomato
  5. Add the parsley 
  6. Mix it in with the quinoa in addition to the vinegar, olive oil and salt and pepper
