Delicious, fresh and filling quinoa salad.
Ingredients:
- 1 cup of quinoa
- 1 1/2 cups of water
- 1 carrot
- Half a small cucumber
- 1 teaspoon of apple cidre vinegar
- 1 1/2 teaspoons of olive oil
- 1 tablespoon of finely diced parsley
- Half a medium-sized tomato
- Salt and pepper to taste
- Cook the quinoa in a cup and a half of water
- Leave to cool in the fridge
- Peel and grate the carrot and cucumber
- Finely dice the tomato
- Add the parsley
- Mix it in with the quinoa in addition to the vinegar, olive oil and salt and pepper
