Cinnamon Brioche French Toast

You will need:
  • 4 large eggs
  • 3/4 of a cup of milk
  • 1 teaspoon of vanilla essence
  • 1 tablespoon of cinnamon (or as much as you want really)
  • 1 teaspoon of nutmeg
  • 1 tablespoon of maple syrup
  • A loaf of brioche (or challah.. any light and fluffy fresh bread)
  • Brown Sugar
  • Butter
1. Add the eggs, milk, vanilla, cinnamon, nutmeg and maple syrup together and stir them well in a large bowl
2. Cut your bread as thick as you'd like
3. Heat up a pan to a medium-high heat and drop in some butter and brown sugar, mix together so they start to caramelise
4. Dip your pieces of bread into the mixture in the bowl (I like to drench mine by squeezing the bread so more of the mixture soaks in) before dropping them in the pan
5. Cook your bread until it is golden on both sides and the inside of your bread isn't gooey or else that means it isn't cooked
6. If you'd like, garnish with fruit and maple syrup!

My Favourite Bagel

This is so simple I almost feel guilty posting it and calling it a recipe. But wowy, is it ever good. This combination of ingredients just compliment each other so well and is just heavenly. Fresh ripe tomatoes, deli cream cheese and bagels that are crunchy on the outside, soft and doughy on the inside... ooh and those sesame seeds.

All you will need:
  • Cream cheese
  • Ripe tomatoes
  • Salt
  • A sesame seed bagel
  1. While your bagel is toasting, slice the tomatoes
  2. Spread the cream cheese over the bagel halves
  3. Lay the tomatoes on top
  4. Sprinkle some salt
  5. And enjoy these simple tastes... they are the secrets of living :)

Ohh, how I love this song...

Ricotta Scrambled eggs

You will need:
  • 5 eggs
  • 1/4 of a cup of milk
  • 1/4 of a cup of ricotta
  • Salt and pepper to taste
  • Spring onion (approximately 3/4 of a spring onion including the greenest parts)
  • Red and or yellow bell pepper (approximately half of one pepper)
  • 1& 1/2 teaspoons of Garlic powder
  • 1& 1/2 teaspoons of Onion powder
  • Butter/olive oil
  • Chives for garnish
1. Very finely dice your bell pepper and spring onion and place them in a bowl
2. Add the milk, ricotta, garlic and onion powder and salt and pepper - stir well
3. Place some butter or olive oil in a pan and pour in your egg mix
4. Stir well until they are as cooked as you would like
5. Add chives for garnish

Fried Potatoes

You will need:
  • 6 large potatoes
  • 3 large onions
  • Onion powder
  • 2 cloves of garlic
  • Salt and Pepper to taste
  • Rosemary
  • Sunflower oil (or any generic cooking oil)
1. Peel and chop your potatoes. I like to cut mine into bite-sized pieces
2. Heat up the oil on high on a pan. Fill it up with oil about 1/4 of the way up in the pan.
3. Toss in your potatoes and stir frequently, turn the heat down to medium-high once the potatoes are in
4. Keep stirring until the potatoes are cooked, but don't let them get too soft. Once they are done enough, remove the majority of the oil, leaving only a little left at the bottom. Put the pan back on the stove top.
5. Cut your onions into pieces similar in size to the potatoes and add them
6. Finely shop the garlic or use a garlic press to add the garlic.
7. Stir frequently until the onions are cooked and the potatoes are golden brown and crispy
8. While you stir, add the salt, pepper, rosemary and onion powder

1. Cut your tomatoes into three thick slices each
2. Place them in a large ziplock bag
3. Add your vinagre, olive oil, salt, pepper, oregano, garlic powder and sugar to the bag and shake it
4. Seal the bag and leave it in the fridge to marinate for at least 30 minutes
5. Cook your tomatoes in a pan on a medium-high heat on each side for about a minute. You don't want your tomatoes to be too soft
6. Coarsely chop your basil leaves and use them to garnish your tomatoes
