Calabrese and Fresh Basil
- One red and one yellow capsicum
- Two onions
- 3 cloves of garlic
- 1 large can of good quality tomatoes
- A handfull of fresh basil
- One tablespoon of olive oil
- 1/2 a cup of cream
- 1/2 a cup of sundried tomatoes
- Some sugar, salt and pepper to taste
- Finely chop the onion and garlic and saute them in the olive oil
- Chop the capsicum and add it to the pan
- Pour in the tomatoes and lower the heat, cover the pan and let the mixture simmer
- Season it with salt, pepper and sugar and continue tasting it as it cooks
- Once finished, blend the sauce with cream and sundried tomatoes and mix in the finely chopped basil
