Best with slim organic carrots.
- Half a kilo/1lb of carrots
- 1 tablespoon of curry powder
- 1 tablespoons of honey
- A knob of butter
- Salt and Pepper to taste
- A pinch of cayenne pepper
- 1 teaspoon of ground nutmeg
- 1/2 a tablespoon of powdered coriander
- 1/2 a teaspoon of fresh grated ginger
- Peel and halve the carrots (long ways)
- Put them in a saucepan with melted butter and 2 shots of water
- Add your seasonings and let the carrots simmer on medium heat for about 15 minutes or until the water has evaporated and the carrots are soft
