These are especially nice for Christmas! If you're not a big fan of coconut or almond, feel free to just remove it and have regular shortbread cookies :)
You will need:
- 1 cup of butter (make sure you've left it out of the fridge long enough to soften)
- 1 cup of flour
- 1/2 a cup of icing sugar
- 1/2 a cup of corn starch
- 1/2 a cup of shredded coconut or ground almonds
- 1 teaspoon of vanilla extract
- Preheat your oven to 150 degrees Celsius
- Mix your ingredients together until well stirred. I find using my hands is better than a standard mixer
- Flatten the dough with a rolling pin
- With a cookie cutter, cut your shapes and place them on a greased baking tray
- Bake for approximately 20 or so minutes
- Sprinkle your cookies with icing sugar if you'd like!
