Coconut or Almond Shortbread Snowflakes

These are especially nice for Christmas! If you're not a big fan of coconut or almond, feel free to just remove it and have regular shortbread cookies :)
You will need:
  • 1 cup of butter (make sure you've left it out of the fridge long enough to soften)
  • 1 cup of flour
  • 1/2 a cup of icing sugar
  • 1/2 a cup of corn starch
  • 1/2 a cup of shredded coconut or ground almonds
  • 1 teaspoon of vanilla extract  
  1. Preheat your oven to 150 degrees Celsius
  2. Mix your ingredients together until well stirred. I find using my hands is better than a standard mixer
  3. Flatten the dough with a rolling pin
  4. With a cookie cutter, cut your shapes and place them on a greased baking tray
  5. Bake for approximately 20 or so minutes
  6. Sprinkle your cookies with icing sugar if you'd like!
